Step 1

Heat the peanut oil in a saucepan. Sprinkle the chicken breasts with the salt and pepper, add to the hot pan and saute for about 3 minutes over high heat. Turn the breast over, reduce the heat to medium, cover and cook the chicken for about 3 minutes; it should be nicely browned on both sides and cooked through but still moist. Place the chicken breast on warm plates.

Step 2

Add the scallion, garlic and butter to the saucepan and cook for about 1 minute. Add the parsley and water and mix well to melt any solidified juices in the pan, then pour the sauce over the chicken. Serve immediately.

We think this fast and easy to prepare chicken is perfectly delcious! My chicken breasts were larger than stated so finished them off in the oven while preparing the sauce.
