Step 1

Thoroughly combine all ingredients except chicken in a zipper bag or shallow bowl.

Step 2

Add chicken turning to coat. Allow to marinate for 15 minutes. Do not marinate for an extended time - the lemon will make the chicken mushy.

Step 3

While chicken marinates, preheat and clean the grill.

Step 4

Remove chicken from marinade and grill over low, indirect heat until cooked through, but not dry. Turn once or twice. Exact cooking time will depend on the thickness of the breasts and the heat of your grill.

Step 5

These can be prepared in marinade and frozen for cooking later. I omit the lemon if doing so, to prevent the chicken from getting mushy.

Delicious! The chicken is succulent and tender! The marinating time is spot on. DH is not a fan of b/s breasts but he hummed through his dinner. Which is the best compliment from him. The fresh lemon juice is key! I did not grill, but put them in a lightly oiled covered frying pan on med-low heat to steam/poach until done. Perfectly awesome chicken.
