Ingredients

The ingredients are:
  • 1/2 cup fresh lemon juice
  • 2 tablespoons oil (olive oil)
  • 2 tablespoons minced garlic
  • 1/2 tablespoon dried Greek oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pounds boneless skinless chicken breasts

How to Make

  • Step 1: Thoroughly combine all ingredients except chicken in a zipper bag or shallow bowl.

  • Step 2: Add chicken turning to coat. Allow to marinate for 15 minutes. Do not marinate for an extended time - the lemon will make the chicken mushy.

  • Step 3: While chicken marinates, preheat and clean the grill.

  • Step 4: Remove chicken from marinade and grill over low, indirect heat until cooked through, but not dry. Turn once or twice. Exact cooking time will depend on the thickness of the breasts and the heat of your grill.

  • Step 5: These can be prepared in marinade and frozen for cooking later. I omit the lemon if doing so, to prevent the chicken from getting mushy.
