Step by Step Method

Step 1

Slice the chicken breast in half lengthwise.

Step 2

Heat tablespoon of oil in frypan and seal chicken on both sides and remove and allow to cool.

Step 3

In the same pan melt the butter then fry the mushrooms till well cooked and then sir in the flour and cook for 2 minutes.

Step 4

Slowly pour in the chicken stock and milk while stirring constantly until all combined, approximately 5 minutes.

Step 5

Cut the pastry in half diagonally (forming a triangle) and place 1 slice of ham and then the a chicken breast on top and then a 1/2 tablespoon cottage cheese and fold over the pastry, brush with egg wash and then place of a baking sheet, complete other 3.

Step 6

Bake at 230C for 15 minutes.

Step 7

Serve with the mushroom sauce and steamed vegetables.

The only change's I made to this recipe was to add garlic to the mushroom mix, I also used cream cheese and seeded mustard instead of cottage cheese, and used some of the mushroom (on top of the breast)inside the parcels as well, which meant I had trouble folding the chicken in the triangle so I decided to go with square parcels instead. I think it depends on the size of the breasts as to making this with triangles or not. We really loved this, I had to bake the chicken for 20 minutes, and the chicken was so moist and tender, the cheese and mushroom's worked really well together as did the ham, everything complimented each other so well. I think using some of the mushroom mix inside the parcels helped make the chicken lovely and tender also. I cut each parcel in half to serve as they were rather large, but that just made for more extra's and there was no shortage of volunteers, to take the leftovers for lunch tomorrow! Thanks for a lovely recipe Pat, this recipe is well worth the effort and made for a lovely dinner tonight.
