Step by Step Method

Step 1

Preheat oven to 325 degrees F.

Step 2

Line a rimmed baking sheet with parchment paper.

Step 3

On the prepared baking sheet place the lemon wedges and then brush them with 1 tablespoon olive oil and sprinkle with 1/4 teaspoon salt.

Step 4

Roast lemons for 20 minutes or until they begin to soften.

Step 5

Meanwhile prepare chicken by sprinkling them with salt and pepper.

Step 6

In a skillet over medium high heat heat 2 tablespoons olive oil and then add the chicken and cook for 3-5 minutes per side or until browned.

Step 7

Remove lemons from oven and add the chicken to the baking sheet and return to oven and cook for 30 minutes.

Step 8

Meanwhile in a bowl combine the breadcrumbs, 2 tablespoons oil, garlic and the lemon zest. set aside.

Step 9

Top each piece of chicken with a slice of cheese and then top cheese with breadcrumb mixture.

Step 10

Sprinkle oregano over the top.

Step 11

Return to oven and bake for another 20-30 minutes or until chicken is cooked.
