Ingredients

The ingredients are:
  • 3 lemons, two cut into wedges and seeded and the third zested
  • 1/4 cup olive oil plus 1 tablespoon olive oil, divided
  • 1 1/4 teaspoons salt
  • 8 chicken drumsticks
  • 1/2 teaspoon pepper
  • 1/2 cup bread crumbs
  • 1 garlic clove, minced
  • 3 ounces feta cheese, cut into whole slices
  • 3 tablespoons oregano, fresh and chopped

How to Make

  • Step 1: Preheat oven to 325 degrees F.

  • Step 2: Line a rimmed baking sheet with parchment paper.

  • Step 3: On the prepared baking sheet place the lemon wedges and then brush them with 1 tablespoon olive oil and sprinkle with 1/4 teaspoon salt.

  • Step 4: Roast lemons for 20 minutes or until they begin to soften.

  • Step 5: Meanwhile prepare chicken by sprinkling them with salt and pepper.

  • Step 6: In a skillet over medium high heat heat 2 tablespoons olive oil and then add the chicken and cook for 3-5 minutes per side or until browned.

  • Step 7: Remove lemons from oven and add the chicken to the baking sheet and return to oven and cook for 30 minutes.

  • Step 8: Meanwhile in a bowl combine the breadcrumbs, 2 tablespoons oil, garlic and the lemon zest. set aside.

  • Step 9: Top each piece of chicken with a slice of cheese and then top cheese with breadcrumb mixture.

  • Step 10: Sprinkle oregano over the top.

  • Step 11: Return to oven and bake for another 20-30 minutes or until chicken is cooked.
