Step by Step Method

Step 1

In a large skillet, toast the coriander seeds over medium-high heat until fragrant, about 2 minutes. Transfer the seeds to a mortar and let cool. Crush the seeds coarsely with a pestle.

Step 2

In the same skillet, heat the olive oil until shimmering. Season the chicken drumsticks with salt and pepper, add them to the skillet and cook over medium high heat, turning, until golden brown all over, about 10 minutes.

Step 3

Add the onion and cook, stirring occasionally until softened, about 3 minutes. Add the garlic and cook for 1 minute. Add the broth and crushed coriander and bring to a boil. Cover and cook over medium low heat until the chicken is cooked through, about 15 minutes.

Step 4

Transfer the chicken to a platter, cover and keep warm.

Step 5

In a small bowl, whisk the mustard with the creme fraiche and tarragon. Whisk the mixture into the skillet and simmer the sauce over medium heat until thickened, about 5 minutes. Return the chicken to the skillet and turn to coat. Serve the chicken with crusty bread to soak up the sauce.

Absolutely delicious! I cut this recipe in half for the two of us, and used bone-in chicken thighs instead of drumsticks. The sauce is absolutely wonderful, and I loved that freshly crushed coriander. Very easy to make, too - and company worthy. Thanks for sharing this one!

This was a hit with my diners. I loved using whole grain mustard and scoring a "make again please" from a picky diner. The sauce is the star. I did cook the chicken longer in order to make sure the juices were clear. Thank you for sharing the recipe!

I scaled this back for 2 serves and the DS and I enjoyed immensely. I did have to use dried coriander and tarragon otherwise made as per recipe though next time I will remove the drumsticks and boil the broth down before adding the mustard/crème fraiche mix so as to have a thicker creamier sauce which tasted absolutely fantastic, thank you breezermom for a great recipe that I look forward to making again, made for For Your Consideration tag game at FF&FF.

Really delicious and juicy! I adapted the ingredients to what I had; so I used chicken breast, heavy cream and fresh flat leaf parsley. The recipe is very easy to follow and the result is great. My family appreciated this recipe very much and we enjoyed it as suggested with bread. Thanks a lot for this great recipe!
