Step by Step Method

Step 1

Heat oil (1-2 tablespoons) in a large skillet on medium-high. Add vegetables; cook about 3 minutes. Add chicken; cook and stir 3 to 4 minutes or until no longer pink.

Step 2

Stir in barbecue sauce; cook on medium heat 3 minutes or until chicken is done, stirring occasionally. Add salt and pepper.

Step 3

Spoon chicken mixture down centres of tortillas; top with cheese. Roll up.

oh my these were a delightful delicious Saturday night supper!! So easy to make and put together and quick too and they even looked good. DH loved them; lovely combination with the chicken and red and yellow peppers; i used a hickory smoked BBQ sauce to finish them. Thanks for posting, will be making them again for sure. Had to come back to say hahaha I forgot to put the cheese on them !!! it is all grated and sitting in the fridge!!! I can hardly wait to make them again with the cheese, now that just tells ya how good they are with or without the cheese, wonderful flavours!!
