Step 1: Heat oil (1-2 tablespoons) in a large skillet on medium-high. Add vegetables; cook about 3 minutes. Add chicken; cook and stir 3 to 4 minutes or until no longer pink.
Step 2: Stir in barbecue sauce; cook on medium heat 3 minutes or until chicken is done, stirring occasionally. Add salt and pepper.
Step 3: Spoon chicken mixture down centres of tortillas; top with cheese. Roll up.
