Step by Step Method
Step 1
Preheat oven to 350 degrees.
Step 2
In a bowl of a stand mixer, cream the butter and sugars together until the mixture is light colored (3 minutes). Add in eggs and vanilla, beat until fluffy.
Step 3
In a small bowl, combine flour, baking soda and cinnamon together. Add to the butter mixture, beat on low speed until combined.
Step 4
Using the lowest setting of your stand mixer, beat in coconut, oatmeal and chocolate chips.
Step 5
Drop by heaping teaspoonful onto a greased or parchment paper lined cookie sheet and bake for 8 minutes (these bake very quickly so watch closely).
Step 6
Cool a few minutes on baking sheet, then remove to cooling rack.
