The ingredients are:
  • 3/4 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup dark brown brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract (or more, no imitation, use the real stuff)
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1 cup flaked coconut
  • 3 cups oats (quick oats)
  • 1/2 cup mini chocolate chips (or more)

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: In a bowl of a stand mixer, cream the butter and sugars together until the mixture is light colored (3 minutes). Add in eggs and vanilla, beat until fluffy.

  • Step 3: In a small bowl, combine flour, baking soda and cinnamon together. Add to the butter mixture, beat on low speed until combined.

  • Step 4: Using the lowest setting of your stand mixer, beat in coconut, oatmeal and chocolate chips.

  • Step 5: Drop by heaping teaspoonful onto a greased or parchment paper lined cookie sheet and bake for 8 minutes (these bake very quickly so watch closely).

  • Step 6: Cool a few minutes on baking sheet, then remove to cooling rack.
