Step by Step Method

Step 1

Sprinkle cheese onto one half of each tortilla. Top with ham, tomato and green onion tops. Fold each tortilla in half, pressing firmly together.

Step 2

In a 10-inch skillet, cook quesadillas, two at a time, over medium heat for 4 minutes, or until lightly browned, turning once. Repeat with remaining quesadillas.

Step 3

Cut each quesadilla into wedges and serve.

These were easy peasy and a great way to use up leftover ham. I used the scallions and tomatoes as written and decided to spinkle some taco seasoning mix over the cheese. Pressed it in a George Foreman grill and it came out toasty, hot and tasty. My son asked me to add some pickled jalapeno which also came out fab. Thank you Mikekey for another quesadilla addition to my repertoire. Played it for Pick Me tag game.
