"This is an easy recipe for a great weeknight dinner. It is simple, just stuff chicken breast with ham and mozzarella. I used some fresh mushrooms as well, and I do think onions or leek would go well also! This is great served with a simple salad."

Step by Step Method

Step 1

Preheat the oven to 220°C/200°C fan forced, and pre-heat a large roasting pan inside whilst oven is heating.

Step 2

Place chicken breast fillets on a chopping board.

Step 3

Using a large sharp knife, cut into thickest side of each fillet to create a pocket, being careful not to cut all the way through.

Step 4

Stuff a quarter of the shaved ham, 4 pieces semi-dried tomato, 1/4 cup of mozzarella cheese and a little of the basil leaves in each chicken pocket. and secure filling with toothpicks.

Step 5

Arrange stuffed chicken breasts on baking paper in the preheated roasting pan and bake for 20 minutes or until cooked through.

Step 6

Remove breast from the oven and allow to rest for 5 minutes.

Step 7

Remove toothpicks from chicken and serve chicken, sliced, with a salad.

Step 8

Serve with a side of fresh salad if desired.
