Ingredients

The ingredients are:
  • 4 fresh chicken breast fillets
  • 1 tablespoon extra virgin olive oil
  • 100 grams leg ham, shaved
  • 16 semi sun-dried tomatoes, cut in half
  • 100 grams mozzarella, grated (1 cup )
  • 2 tablespoon's basil leaves, roughly torn

How to Make

  • Step 1: Preheat the oven to 220°C/200°C fan forced, and pre-heat a large roasting pan inside whilst oven is heating.

  • Step 2: Place chicken breast fillets on a chopping board.

  • Step 3: Using a large sharp knife, cut into thickest side of each fillet to create a pocket, being careful not to cut all the way through.

  • Step 4: Stuff a quarter of the shaved ham, 4 pieces semi-dried tomato, 1/4 cup of mozzarella cheese and a little of the basil leaves in each chicken pocket. and secure filling with toothpicks.

  • Step 5: Arrange stuffed chicken breasts on baking paper in the preheated roasting pan and bake for 20 minutes or until cooked through.

  • Step 6: Remove breast from the oven and allow to rest for 5 minutes.

  • Step 7: Remove toothpicks from chicken and serve chicken, sliced, with a salad.

  • Step 8: Serve with a side of fresh salad if desired.
