Step by Step Method

Step 1

In stock pot cook potatoes in chicken stock 10 minutes

Meanwhile heat butter combine flour cook until light gold

Add milk and seasoning

Stir until thickened simmer 10 minutes

Add potatoes and stock

Add soup

Step 7

Simmer for 10 more minutes

Add velveeta light cream and hot sauce, they used a heavier hand add to your taste

Continue simmering stirring gently until cheese is melted

And soup is thick

Taste for seasoning

Bowl up and sprinkle on cheese bacon and chives

Daily Inspiration

This is a very tasty soup. I've been to Cheddars many times, but have never had their potato soup. We enjoyed the flavor; however, the soup never really thickened up as much as we expected. Still it was very yummy and filling.
