Step by Step Method

Step 1

In a skillet over medium heat add the pine nuts and cook until golden, shaking to prevent burning (3-5 minutes). Transfer to a plate to cool.

Step 2

In a blender or food processor combine the cooked nuts and the next 6 ingredients ( - salt); process until smooth and set aside.

Step 3

Preheat grill to medium heat

Step 4

Coat the cauliflower with cooking spray and then set over heat; cover grill and cook for 10 minutes, turning once. Transfer to a serving dish or plates and spoon 2 tablespoons of pesto over each steak.

Loved this side dish! The cauliflower came out smokey and the basil sauce added a level of basil Yum! I'll be making this again, that's for sure. The only thing is that you need to use up the basil sauce pretty soon because it turns color and loses it's bright green, but still good. Thank you, ellie, for sharing. Made it for FYC.

These are a great side instead of potato and very filling! Eating these instead cuts down on the starch and helps keep my sugars at bay, and they are healthy to boot!

I have been wanting to try making cauliflower this way and was happy to see this one with a few added ingredients to make it a tasty experience. I only made 2 slices and cut the recipe accordingly. Perfect dish for cauliflower lovers! With family preferences in mind I did use almonds instead of pine nuts and did more parsley than basil for the pesto. Grilling the cauliflower and serving it with the pesto sauce so so good. There will be repeats!

What a great way to prepare cauliflower, this is delicious!!! We enjoyed this with grilled pork chops, then I enjoyed the leftovers in a tossed salad. I will be making this again for sure.
