Step 1: In a skillet over medium heat add the pine nuts and cook until golden, shaking to prevent burning (3-5 minutes). Transfer to a plate to cool.
Step 2: In a blender or food processor combine the cooked nuts and the next 6 ingredients ( - salt); process until smooth and set aside.
Step 3: Preheat grill to medium heat
Step 4: Coat the cauliflower with cooking spray and then set over heat; cover grill and cook for 10 minutes, turning once. Transfer to a serving dish or plates and spoon 2 tablespoons of pesto over each steak.
