Ingredients

The ingredients are:
  • 2 tablespoons pine nuts
  • 2 cups basil leaves
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 2 garlic cloves, peeled
  • 1/2 teaspoon salt
  • 1 1/2 pounds cauliflower (cut vertically into eight 1/2 inch thick "steaks")

How to Make

  • Step 1: In a skillet over medium heat add the pine nuts and cook until golden, shaking to prevent burning (3-5 minutes). Transfer to a plate to cool.

  • Step 2: In a blender or food processor combine the cooked nuts and the next 6 ingredients ( - salt); process until smooth and set aside.

  • Step 3: Preheat grill to medium heat

  • Step 4: Coat the cauliflower with cooking spray and then set over heat; cover grill and cook for 10 minutes, turning once. Transfer to a serving dish or plates and spoon 2 tablespoons of pesto over each steak.
