Your right cauliflower is a great substitute for potatoes! Trying to watch the waistline at the moment so this was perfect to have with my chicken. Very tasty!

We are not low-carb-ers, but I was really excited to try this. I ended up adding more of the sour cream since my cauliflower pieces were very small. It came out good, and would be a great potato salad sub if you are trying to eat less carbs. Generous portions.

I changed this up a bit. Subbed regular mustard and Greek yogurt for some protein. We loved this as it is the healthier way to go when you are craving potato salad!

I made a ham steak and had this as a side and it was delicious! I cut the recipe down to 4 servings. Sure wish I could freeze this stuff :) Thank you for sharing this healthier recipe for Potato Salad Sue. It is great for us diabetics! Linda

I made it along with your ribs for a delicious southern meal! This is a great substitute for the real thing and I will treasure this, especially this summer when we have potato salad all the time. I feel good knowing I am trying to keep my sugar down and this will help, since I have a great love for potato salad!

Loved this salad. What an excellent alternative for the low carbers that love potato salad. Admittedly I was hesitant thinking to cauliflower and hard boiled eggs but it works! Even the non low carbers enjoyed this delicious substitute for potato salad. Added to my Salad Cookbook and will see to repeats.
