"Here is a great side dish that pairs well with many dishes. It's a nice change from plain rice. The carrots sweeten the rice, and make it extra tasty. It's one you can make often, since you probably have the ingredients on hand most of the time. PLEASE NOTE: The time it takes to cook the rice depends on the kind of rice you make, so look on the back of the rice package/box to see how long your rice takes."

Step 1
In a large skillet, saute carrots and onion in butter, until tender.

Add rice, and stir to coat.

Bring to a boil. Reduce heat. Cover, and simmer until rice is tender.
