"This was my mother's recipe for pasta sauce. She did not give me a written recipe, but showed me one day on a visit when my second baby was born over 26 years ago, just as her father showed her when he retired and started cooking as a hobby. She said she always enjoyed making this sauce because as she put it, "You can make a large batch of sauce on Sunday to serve over spaghetti, and you are set for other meals the rest of the week" and that's just what she did too."

Step by Step Method
Step 1
If using meat, brown the meat over medium-high heat in sauce pot until meat looses its pinkness, but don't over brown. If not using meat, simply start with the next step.
Step 2
Stir together in sauce pot; plain tomato sauce, condensed tomato soup, and water to browned meat (if making meat sauce).
Step 3
Add the rest of the ingredients in order given, including coffee, and bring to a simmer. Cook for ten minutes. The coffee mellows the tomato flavor and gives this sauce a "Cooked all day" flavor.
Step 4
Serve over your favorite pasta. Leftover sauce can be stored in fridge or frozen and improves by melding the flavors.
