Carmelized Onion & Rosemary Bruschetta

"Economical, flavour loaded appetizer. It's "Do Ahead" right up to the assembly & final bake.. You may have everything ready a day ahead! I use my mini chopper to do the onions, celery and also to chop the fresh rosemary. I used shredded Italian 4 cheese and it was great. Buttering the bottom of the baguette slices makes a lovely toasty crisp to them"

Step by Step Method

Step 1

Melt 1 tablespoon butter in a skillet over medium heat.

Step 2

Add onions, saute stirring fregently until the onions are golden (apprx 15 minutes)..

Step 3

Add rosemary & stir

Step 4

Season with salt & pepper.

Step 5

Pre-heat oven to 375f.

Step 6

Lightly butter one side of the bread.

Step 7

Place bread slices buttered side down on an oven proof tray.

Step 8

Cover the bread slices with the prepared onions.

Step 9

Sprinkle on the cheese, be generous.

Step 10

Bake for apprx 10 minutes or until the cheese is golden/or bubbly.

Step 11

Serve warm.

First off I caramelized the bits of onion and added in garlic with the onion. It gave the Bruschetta a great flavor! I used a mix of Mozzarella and Parmesan to make sure the cheese would melt. We loved it as an appetizer for Easter!

Made for the FF&F What’s on the Menu? Tag Game – I actually made 2 versions of your recipe because DH is diet-restricted from cheese (something I cannot imagine accepting). I also used a mixture of breads. I used sml baguette roll slices for his & a sliced bakery roll for mine w/cheese. I also added garlic (a must for me). The cheese product behaved a bit strange. It was a shredded blend of mozzarella & I’m not sure what else. Some of the smaller bits were more crunchy than melted. BUT that certainly didn’t hurt the lovely sweet flavor of the caramelized onion & garlic. YUM! Thx for sharing this recipe w/us, Bergy. :-)
