Step by Step Method

Step 1

Melt the butter in a non-stick pan and sauté the onion and garlic until they have softened and just lightly browned; add the sugar and continue cooking for about 5 minutes; remove from the pan. Rinse pan.

Step 2

Whisk the eggs lightly and pour into pan; when the base of the omelette begins to set, add the cheese, onions and garlic and thyme.

Step 3

Fold a cook on the other side,slide the omelette onto the serving plates and serve immediately with the arugula drizzled with olive oil and sprinkled with lemon zest.

When I took my last bite I said "That was wonderful" and I think that says it all about this recipe. The arugula looked quite limp so I used pea sprouts instead. This goes into my favorite omelet recipes. 13 Aug 16 Made before and knew I loved it - I had some goat cheese on hand so made it again . Loved it just as much . No arugula this time.
