Ingredients

The ingredients are:
  • 1 yellow onion, chopped
  • 2 garlic cloves, chopped
  • 1 tablespoon butter
  • 1 tablespoon granulated sugar
  • 4 large eggs
  • 40 grams goat cheese
  • Thyme (1 pinch)
  • Salt, to taste
  • Fresh ground black pepper, to taste
  • 2 cups arugula
  • 2 to 3 tablespoons olive oil
  • 1 tablespoon lemon zest

How to Make

  • Step 1: Melt the butter in a non-stick pan and sauté the onion and garlic until they have softened and just lightly browned; add the sugar and continue cooking for about 5 minutes; remove from the pan. Rinse pan.

  • Step 2: Whisk the eggs lightly and pour into pan; when the base of the omelette begins to set, add the cheese, onions and garlic and thyme.

  • Step 3: Fold a cook on the other side,slide the omelette onto the serving plates and serve immediately with the arugula drizzled with olive oil and sprinkled with lemon zest.
