Step 1: Melt the butter in a non-stick pan and sauté the onion and garlic until they have softened and just lightly browned; add the sugar and continue cooking for about 5 minutes; remove from the pan. Rinse pan.
Step 2: Whisk the eggs lightly and pour into pan; when the base of the omelette begins to set, add the cheese, onions and garlic and thyme.
Step 3: Fold a cook on the other side,slide the omelette onto the serving plates and serve immediately with the arugula drizzled with olive oil and sprinkled with lemon zest.
