Step 1

Preheat oven to 220C/200C fan forced.

Step 2

Line 2 oven trays with baking paper and place pizza bases on prepared trays.

Step 3

Spread the pizza sauce over the pizza bases and top with caramelised onion, artichoke, cheese and pine nuts (is using) and drizzle with oil and bake for 10-15 minutes or until golden brown.

Step 4

Serve pizzas topped with rocket.

Great tasting pizza! I love the play of the blue cheese, arugula and artichokes with the hint of pine nuts. I think we added only about 2/3 of the blue cheese (because that is what we had), but it was a strong blue cheese, so it was plenty. Thanks for a keeper.
