Ingredients

The ingredients are:
  • Pizza crusts (2 x 25cm bought pizza bases/crusts)
  • 1/2 cup pizza sauce
  • 2 cups sliced yellow onion (caramelised or more if you like your onion)
  • 1 jar (200 grams) artichoke hearts (quartered, slice in half and pat dry of oil or if in brine drain and slice)
  • 200 grams fresh mozzarella (in brine sliced thinly)
  • 2 tablespoons pine nuts (optional)
  • 2 tablespoons olive oil (light)
  • 100 grams baby rocket leaves

How to Make

  • Step 1: Preheat oven to 220C/200C fan forced.

  • Step 2: Line 2 oven trays with baking paper and place pizza bases on prepared trays.

  • Step 3: Spread the pizza sauce over the pizza bases and top with caramelised onion, artichoke, cheese and pine nuts (is using) and drizzle with oil and bake for 10-15 minutes or until golden brown.

  • Step 4: Serve pizzas topped with rocket.
