"Simple and elegant. A great starter course. I found this on one of my Mother's recipe cards. I think she made it up after having something similar in Santa Monica CA."

Step 1

Heat broth to near boiling in a medium pot.

Step 2

Divide the avocado slices between bowls.

Step 3

Place 2-3 lemon slices over the avocados.

Step 4

Pour heated broth into the bowls.

Step 5

Add 1 tbsp sherry to each bowl.

Step 6

Sprinkle parsley over the broth in each bowl.

A lovely light soup to serve everyday or for special guests. I served this recipe at a Birthday Luncheon. It looks so impressive. Unfortunately I forgot the parsley. Be sure to press on the lemon slices with your spoon to add additional flavour. Enjoyed by all - it will be made again.

I made this as instructed except for using white wine in lieu of the sherry. I was quite please and surprised at how delicious this is. I will definitely be making this often!!!
