"One of the ways that they make a breakfast sandwich in Bulgaria. Can use mozzarella and sourdough bread as well. I think this could go in air fryer as well."

Step by Step Method

Step 1

Butter bread lightly.

Step 2

Place on broiler rack.

Step 3

In a bowl add the eggs, salt, pepper, feta and grated cheese and mix fully until combined.

Step 4

Add a few tablespoons of the mixture on top of each slice of buttered bread and spread it out all the way to the crust.

Step 5

On a low rack put your oven on broil and keep a very close eye on them.

Step 6

It will take around 10 minutes, but it will really depend on the oven.

Step 7

As soon as they are golden and feel firm on top they are ready.

Step 8

Sprinkle on dry oregano.

This was a delightful side to homemade vegetable soup! Made as directed. Used a sauerkraut rye bread from our local bakery. This would be good with the bread toasted beforehand and then baked. And as we like heat, will be adding a pinch of cayenne. YUM! Thank you for sharing this keeper Dienia!
