Buffalo Chicken "French Dip" Sandwich

"A play on the classic French Dip Sandwich. Chicken, a creamy blue cheese celery sauce; and served with a hot buttery spicy sauce to dip the sandwich in. Perfect for a football party or any game night. You can even make these on a large roll and cut in to individual bites for appetizers; or just serve as is, with a bowl of soup or salad for a lunch or dinner. I use a store bought rotisserie chicken which works perfect for this, but you can also roast your own. Depending on how high you want to pile your sandwich and the size of the roll, the amount of chicken can vary."

Step by Step Method
Step 1
Blue Cheese Sauce ... Mix all the ingredients in a small bowl, cover with saran wrap and refrigerate until ready to serve

Dipping Sauce ... Add the sauce, broth and butter to a small pot and bring to a light boil, reduce to a simmer to keep warm until ready to serve.
Step 3
Chicken and Rolls ... You can use the chicken cold or even room temperature; but I prefer warm. Add the diced or shredded chicken to a small bowl and cover with saran wrap and microwave 30 seconds to a minute on medium to medium high heat - just until the chicken is warm. This step is optional.
Step 4
Cut the rolls in half and lightly butter. Broil for a few seconds just until the rolls are lightly brown. Depending on the size of your rolls, you will need between 1/2-1 teaspoon per roll.
Step 5
Sandwich ... Layer it any way you like. But, I prefer chicken, topped carrots, the creamy blue cheese sauce, and finish with the lettuce.
Step 6
Serve ... Just make sure to serve your sandwich with a small bowl of the warm dipping sauce. Fries, chips, a bowl of soup or side salad makes a great lunch or dinner. Or cut these in 3-4 pieces per sandwich for a great appetizer. ENJOY!
