  • The following recipe serves 4-8 people.

Ingredients

The ingredients are:
  • Chicken:
  • 1/2 to 3/4 cup diced or shredded chicken (rotisserie works great for this)
  • 4 rolls (a hoagie style, kaiser or french roll are ideal for this)
  • 2 cups romaine, chopped (approximately 1/2 cup per sandwich)
  • 1 1/2 cups shredded carrots (approximately 1/4+ cup per sandwich)
  • 2 to 4 teaspoons butter
  • Blue Cheese Sauce:
  • 1/2 cup blue cheese, crumbled (gorgonzola is also a good substitute)
  • 1/2 cup celery, diced very fine (include the leaves)
  • 1/2 cup mayonnaise
  • 1/2 lemon, juiced
  • Salt and pepper to taste
  • Dipping Sauce:
  • 1/2 cup buffalo wing sauce (use your favorite brand, I like spicy; found right in your local grocery store)
  • 1/2 cup chicken broth
  • 2 tablespoons butter

How to Make

  • Step 1: Blue Cheese Sauce ... Mix all the ingredients in a small bowl, cover with saran wrap and refrigerate until ready to serve

  • Step 2: Dipping Sauce ... Add the sauce, broth and butter to a small pot and bring to a light boil, reduce to a simmer to keep warm until ready to serve.

  • Step 3: Chicken and Rolls ... You can use the chicken cold or even room temperature; but I prefer warm. Add the diced or shredded chicken to a small bowl and cover with saran wrap and microwave 30 seconds to a minute on medium to medium high heat - just until the chicken is warm. This step is optional.

  • Step 4: Cut the rolls in half and lightly butter. Broil for a few seconds just until the rolls are lightly brown. Depending on the size of your rolls, you will need between 1/2-1 teaspoon per roll.

  • Step 5: Sandwich ... Layer it any way you like. But, I prefer chicken, topped carrots, the creamy blue cheese sauce, and finish with the lettuce.

  • Step 6: Serve ... Just make sure to serve your sandwich with a small bowl of the warm dipping sauce. Fries, chips, a bowl of soup or side salad makes a great lunch or dinner. Or cut these in 3-4 pieces per sandwich for a great appetizer. ENJOY!
