Step 1: Blue Cheese Sauce ... Mix all the ingredients in a small bowl, cover with saran wrap and refrigerate until ready to serve
Step 2: Dipping Sauce ... Add the sauce, broth and butter to a small pot and bring to a light boil, reduce to a simmer to keep warm until ready to serve.
Step 3: Chicken and Rolls ... You can use the chicken cold or even room temperature; but I prefer warm. Add the diced or shredded chicken to a small bowl and cover with saran wrap and microwave 30 seconds to a minute on medium to medium high heat - just until the chicken is warm. This step is optional.
Step 4: Cut the rolls in half and lightly butter. Broil for a few seconds just until the rolls are lightly brown. Depending on the size of your rolls, you will need between 1/2-1 teaspoon per roll.
Step 5: Sandwich ... Layer it any way you like. But, I prefer chicken, topped carrots, the creamy blue cheese sauce, and finish with the lettuce.
Step 6: Serve ... Just make sure to serve your sandwich with a small bowl of the warm dipping sauce. Fries, chips, a bowl of soup or side salad makes a great lunch or dinner. Or cut these in 3-4 pieces per sandwich for a great appetizer. ENJOY!
