Step by Step Method

Step 1

Cook rice in a saucepan of boiling water, following packet directions, until tender; drain the rice and rinse under cold water.

Step 2

Drain rice again really well and set aside to cool for 10 minutes.

Step 3

Place the tomato, parsley, mint, onion and rice in a large bowl & season with salt and pepper.

Step 4

Place the garlic, oil and vinegar into a small jug & whisk with a fork to combine; drizzle dressing over rice mixture.

Step 5

Toss well to combine.

Step 6

Serve.
