Step by Step Method

Step 1

Line a large baking sheet with foil. Spread the tomato slices on the baking sheet and sprinkle with salt, pepper, and lemon zest. Melt the butter in a medium skillet and stir in the bread crumbs and toast very lightly (overcooking, will cause them to overbrown in the broiler and possibly burn prematurely).

Step 2

Sprinkle over the tomato slices. Place the tomatoes in the broiler, and broil several minutes to brown crumbs lightly, watching very carefully to prevent the breadcrumbs to burn. Serve hot.

Super simple and super good! The lemon zest sure adds to this, and we'll definitely be having these again! I wanted a bit more crunch, so I used half panko, half bread crumbs. Otherwise made as written. Thanks for sharing, FEM!
