Step 1: Line a large baking sheet with foil. Spread the tomato slices on the baking sheet and sprinkle with salt, pepper, and lemon zest. Melt the butter in a medium skillet and stir in the bread crumbs and toast very lightly (overcooking, will cause them to overbrown in the broiler and possibly burn prematurely).
Step 2: Sprinkle over the tomato slices. Place the tomatoes in the broiler, and broil several minutes to brown crumbs lightly, watching very carefully to prevent the breadcrumbs to burn. Serve hot.
