  • 4 ripe tomatoes, sliced 1/2-inch thick
  • 1 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 2 lemons, finely grated zest of
  • 3 tablespoons butter
  • 1/2 cup dry bread crumbs

How to Make

  • Step 1: Line a large baking sheet with foil. Spread the tomato slices on the baking sheet and sprinkle with salt, pepper, and lemon zest. Melt the butter in a medium skillet and stir in the bread crumbs and toast very lightly (overcooking, will cause them to overbrown in the broiler and possibly burn prematurely).

  • Step 2: Sprinkle over the tomato slices. Place the tomatoes in the broiler, and broil several minutes to brown crumbs lightly, watching very carefully to prevent the breadcrumbs to burn. Serve hot.
