  • Substitute the white rice with quinoa. Benefit: Quinoa is high in protein, making this dish a healthier option.
  • Substitute the olive oil with coconut oil. Benefit: Coconut oil has a higher smoke point, making it a better option for stir-frying.

Vegetarian Version Replace the shrimp with an equal amount of firm tofu. Increase the amount of mushrooms to 1 cup. Add 1/4 cup of diced bell peppers to the stir fry.

Coconut Rice - This fragrant side dish is a perfect complement to the savory flavors of the Broccoli Shrimp Stir Fry. The creamy coconut milk and subtle sweetness of the rice will balance out the bolder flavors of the stir fry.

Egg Drop Soup: Egg Drop Soup is a light and flavorful soup that pairs nicely with the Broccoli Shrimp Stir Fry. The mild flavor of the soup is a great contrast to the bolder flavors of the stir fry, while the egg adds a nice texture to the meal.

I only had raw prawns so gave them a part cooked and finished the cooking at the end. This is one of the best quick and delicious recipes I have had in some time. I did serve it over cauliflower rice for low carb eating and used broccolini for the broccoli otherwise made as per recipe using the extra water.
