Here is what he states about the dish: "Mixing rice and broccoli never struck me as a natural combination until I saw it as a side dish for meat dishes in Portuguese restaurants in Rio de Janeiro. Classic places like Nova Capela in Rio’s Lapa district serve it with a delicious roast kid. This is a simple and quick version which keeps the freshness of the broccoli by adding them just before the rice is cooked.""

Step by Step Method

Step 1

Heat the butter and olive oil in a medium pot, add the onion and fry gently until translucent. Add the garlic and cook for another minute.

Step 2

Add the rice, stir to coat with the oil and then add the water and salt. Cover and cook for 7-10 minutes stirring occasionally.

Step 3

When the rice is just about cooked, add the broccoli and mix well. Cook for another 3-5 minutes, stirring with a fork to keep the rice fluffy.

Great recipe. I followed as written -- using a little chicken bouillon since I didn't have any broth -- and the rice came out perfect! (I do think it could easily be converted to a rice cooker and/or instant pot recipe, were someone so inclined.) My daughter asked to take the leftovers to school tomorrow for lunch, so I know she really loved it. This is a great way to use up that little bit of broccoli that seems to always be lurking in my refrigerator...

This is a great tasting rice recipe and very easy to put together. I did not add salt to the water because DH must add soy sauce to any rice recipe, lol. This will be made often.

This was a lovely side dish. Adding the broccoli towards the end allowed it to steam until it was the perfect texture to mix with the rice. we enjoyed it very much. Made for Culinary Quest 2016.

This was a nice bassic rice dish. I ended up adding cooking time as the rice was still to firm to eat. Next time I will add some spices, but we enjoyed the broccoli and onions. Thank you for sharing the recipe!
