"This started out to be a low carb recipe, but I soon grew to love and crave it and make it often. You don't have to be low carbing to love this salad. Of course, you can use real sugar instead of splenda. UPDATE: I made this recently and had green onions and red grapes that needed to used, so I added them and it was wonderful!"

Step by Step Method

Step 1

Dice up broccoli and cauliflower to bite size pieces. Small dice the onion. Place all in a large bowl. Set aside. If you are using fresh bacon, fry it crisp and let it cool before you dice it up.

Step 2

In a separate bowl, mix up mayo, sugar or splenda, lemon juice, and vinegar.

Step 3

Add mayo mixture and bacon to veggie bowl. Stir to coat. Add salt and pepper to taste.

Step 4

Chill for an hour and serve!

I made a few subtle changes to this recipe by blanching the vegetables first and using ham instead of bacon, I also used the sugar option. I made the salad without the ham (for myself) and then added ham after for the rest of the family. Topped with fresh chives this salad looked beautiful. What a lovely light and refreshing salad this is! Great flavors and just the perfect salad for a warm summers night. We really did enjoy this salad and I will be definitely making this again. I added in cashews and raisins and it was so yummy! Refreshing and takes about 15 minutes to prepare. Great when it's hot here in Vegas!

Love this summertime salad! I had cherries and so I threw them, cut in half and seeded, into the mix. Crunchy and delicious with our burgers and hot dogs on the grill. Great any time. Oh yeah I sprinkled mine with some cashews too!
