"One of my favourite things is to make a breakfast casserole and either refrigerate or freeze it until needed. Because sometimes you need a good breakfast but simply don't have the time. I have frozen this in small portions after baking, and it reheats well in the microwave. If you make it the day before, increase baking time by about 10 minutes."

Step by Step Method

Step 1

Preheat oven to 375F; grease a medium casserole dish.

Step 2

Brown and crumble sausage in a skillet; drain excess grease.

Step 3

Mix together shredded potatoes and melted butter; press into bottom and up sides of prepared casserole dish.

Step 4

Combine sausage and remaining ingredients in a large bowl; pour into potato crust.

Step 5

Bake for 60 minutes, or until a toothpick inserted near center comes out clean. Let stand 5 minutes before serving.
