  • 3 cups potatoes, shredded and with liquid pressed out
  • 1/4 cup butter, melted
  • 12 ounces cheddar cheese, shredded
  • 1/2 cup onion, minced
  • 1/2 cup green pepper, diced
  • 1 (16 ounce) container small-curd cottage cheese, drained
  • 6 large eggs, beaten

How to Make

  • Step 1: Preheat oven to 375F; grease a medium casserole dish.

  • Step 2: Brown and crumble sausage in a skillet; drain excess grease.

  • Step 3: Mix together shredded potatoes and melted butter; press into bottom and up sides of prepared casserole dish.

  • Step 4: Combine sausage and remaining ingredients in a large bowl; pour into potato crust.

  • Step 5: Bake for 60 minutes, or until a toothpick inserted near center comes out clean. Let stand 5 minutes before serving.
