Ingredients
- 1 pound bulk breakfast sausage
- 3 cups potatoes, shredded and with liquid pressed out
- 1/4 cup butter, melted
- 12 ounces cheddar cheese, shredded
- 1/2 cup onion, minced
- 1/2 cup green pepper, diced
- 1 (16 ounce) container small-curd cottage cheese, drained
- 6 large eggs, beaten
How to Make

Step 1: Preheat oven to 375F; grease a medium casserole dish.

Step 2: Brown and crumble sausage in a skillet; drain excess grease.

Step 3: Mix together shredded potatoes and melted butter; press into bottom and up sides of prepared casserole dish.

Step 4: Combine sausage and remaining ingredients in a large bowl; pour into potato crust.

Step 5: Bake for 60 minutes, or until a toothpick inserted near center comes out clean. Let stand 5 minutes before serving.
