Step by Step Method

Step 1

Preheat oven to 400 degrees F.

Step 2

In a baggie place the seeds (caraway and fennel) and then crush them with a mallet or a rolling pin. Add flour and pepper to baggie; shake.

Step 3

In a 15 x 9 inch pan spread sauerkraut on bottom of baking dish and then sprinkle 1/3 of the flour over. Arrange onion pieces over; sprinkle with half of the remaining flour mixture and sprinkle with salt.

Step 4

Spread half of the apples over and sprinkle with the remaining flour.

Step 5

Place bratwurst over the apples. Tuck in the bay leaves.

Step 6

In a measuring cup or bowl mix together liquid ingredients (broth - ketchup). Pour over all. Cover with foil.

Step 7

Roast for 45 minutes; uncover casserole, brush with the melted butter and continue roasting uncovered for 25 minutes or until apples and sausages begin to brown.

Step 8

Serve with the bread.

Yummy. We thought this tasted perfect. I used barrel kraut and Johnsonville beer brats. Apples might have been Gala- they weren't marked in my produce box. Flavors might differ with brands (I know there is a sweeter type of kraut). I served with light rye bread- the dark rye at the market was smooshed. Made for Billboard tag.

I used a 14 oz. smoked turkey sausage cut into chunks. My apples were not good - so much for buying locally. But I salvaged the equivalent of 1 1/2 apples total. Made this to take to a friend's house for dinner and she hates caraway and fennel, so I skipped them. I also skipped the melted butter. But, we sure enjoyed it a lot! PS What do you do with the other 1/2 of the apples? I used all the apple I had, b/c there were so few usable slices.

I made this for the hubby... he felt that the sauerkraut was a bit to sweet and the bratwurst turned out on the soft side...he did eat all...made for "Billboard" tag game...
