Step 1: Preheat oven to 400 degrees F.
Step 2: In a baggie place the seeds (caraway and fennel) and then crush them with a mallet or a rolling pin. Add flour and pepper to baggie; shake.
Step 3: In a 15 x 9 inch pan spread sauerkraut on bottom of baking dish and then sprinkle 1/3 of the flour over. Arrange onion pieces over; sprinkle with half of the remaining flour mixture and sprinkle with salt.
Step 4: Spread half of the apples over and sprinkle with the remaining flour.
Step 5: Place bratwurst over the apples. Tuck in the bay leaves.
Step 6: In a measuring cup or bowl mix together liquid ingredients (broth - ketchup). Pour over all. Cover with foil.
Step 7: Roast for 45 minutes; uncover casserole, brush with the melted butter and continue roasting uncovered for 25 minutes or until apples and sausages begin to brown.
Step 8: Serve with the bread.
