Ingredients

The ingredients are:
  • 1 teaspoon caraway seeds
  • 1 teaspoon fennel seeds
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon pepper
  • 20 ounces sauerkraut (4 cups, rinsed, drained, squeezed dry)
  • 1 (8 ounce) yellow onion (halved lengthwise and sliced crosswise)
  • 3 whole (18 ounces) apples (peeled, cored and thinly sliced, I used 2 granny smith apples)
  • 6 smoked (17 ounces) bratwurst sausage (pieced)
  • 4 bay leaves
  • 1 cup beef broth
  • 2 tablespoons vermouth
  • 2 tablespoons ketchup
  • 2 tablespoons butter, melted
  • Pumpernickel bread, for serving

How to Make

  • Step 1: Preheat oven to 400 degrees F.

  • Step 2: In a baggie place the seeds (caraway and fennel) and then crush them with a mallet or a rolling pin. Add flour and pepper to baggie; shake.

  • Step 3: In a 15 x 9 inch pan spread sauerkraut on bottom of baking dish and then sprinkle 1/3 of the flour over. Arrange onion pieces over; sprinkle with half of the remaining flour mixture and sprinkle with salt.

  • Step 4: Spread half of the apples over and sprinkle with the remaining flour.

  • Step 5: Place bratwurst over the apples. Tuck in the bay leaves.

  • Step 6: In a measuring cup or bowl mix together liquid ingredients (broth - ketchup). Pour over all. Cover with foil.

  • Step 7: Roast for 45 minutes; uncover casserole, brush with the melted butter and continue roasting uncovered for 25 minutes or until apples and sausages begin to brown.

  • Step 8: Serve with the bread.
