Step by Step Method

Step 1

Melt 1/4 cup of butter into a 9 inch square pan.

Step 2

Sprinkle with brown sugar.

Step 3

Mix berries and lemon rind together. Put into pan, distributing evenly.

Step 4

Cream 1/2 cup of butter and granulated sugar together and beat until light.

Step 5

Add egg, and beat well.

Step 6

Sift dry ingredients and add alternately with milk, beating until smooth.

Step 7

Spread on berries.

Step 8

Bake at 375 degrees for 30 minutes. Let stand 20 minutes, and turn out onto serving platter.

With lots of blueberries that we picked at the farm, I decided to come here to look for some good looking recipes. This one fit the bill perfectly and it was one of the first ones I made. It is sweet, but not too sweet and tasted great with scoops of ice cream all over the top. One of our new favorites!

I never made a blueberry upside down cake in my life but wanted to make this for a cookout over the weekend. It was delicious served up with Cool Whip. The pan only had crumbs when I brought everything back into the house at the end of the day, so it was a big hit!
