Step by Step Method

Step 1

Heat the oil in a deep pan, and add the garlic and chili and cook over a medium heat until they are a golden colour.

Step 2

Peel the tomatoes and chop roughly, add these to the pan, and season with the salt and pepper, cook over a low heat for about 20 minutes or until the sauce thickens.

Step 3

Before serving add the capers, olives and parsley.

Step 4

Serve with cooked pasta.

I am an olive lover from way back and made this sauce because it looked so good. It was so delicious over zoodles... It makes quite a few servings so I will freeze the rest for later. Quick, easy and tasty. We added more parsley/capers and only about a quarter of the oil. Great flavors together.
