Step by Step Method

Step 1

In blender mix egg mixture for 3 minutes

Step 2

Meanwhile heat butter in omelet pan ( you may want to cook 2 separate omelets, so just do 2 times ,just blend egg mixture 2 time)

Step 3

Pour egg mixture in and cook til partially set

Step 4

Put filling mixture on 1 side fold over and cook until set on low

Step 5

Serve on heated plates

Yummers. I had never had pickles inside of an omelet, but let me say, it's a really tasty addition. All the other ingredients are really marvelous together and we sure did all enjoy this lovely omelette as breakfast for dinner. Thank you, Dee, for sharing. Made it for Best of 2021 as recommended by ImPat.

Flavor = great; Add-ins = delicious; Easy to make = yep; my talent = nope! I can see why this was a favorite - the ingredients are perfect and the addition of pickle gives it that hint of Sweden. When I had a gas stove, I could make beautiful omelettes. Now that I have electric, I can't make one at all. Have tired all kinds of techniques, hints... So it's not pretty, but tastes great! We loved it! PS I served the bacon on the side and sautéed the veggies in a bit of bacon grease. Did not use butter for the eggs.

I scaled this back for one serve but cooked up the bacon, mushroom, onion, cornichon (for dill) and tomatoes (grape tomatoes) and then fill them into the omelet and sprinkled with cheese and folded and served for a delicious, generous and filling breakfast. To make the omelet mix I was too lazy to pull the blender out of the back of the cupboard so just whisked everything together in a bowl.
