Step by Step Method
Step 1
In a saucepan combine the berries, 1/2 cup sugar and the lemon juice. Mash the berries with a potato masher until they are broken up and juicy and then cook them over medium high heat until thickened (under 10 minutes). Using a rubber spatula press the berries through a fine sieve into a bowl and transfer to a refrigerator to cool completely. Discard all skins and seeds.
Step 2
When cool whisk together the remaining sugar (1/2 cup), yogurt, cream, vanilla and salt until the sugar dissolves. Chill until cold (2 hours) in the refrigerator.
Step 3
Churn in an ice-cream maker per manufacturers directions. Enjoy as a soft serve or freeze until firm.
