Ingredients

The ingredients are:
  • 12 ounces mixed berries (raspberries and blackberries - see note in description)
  • 1 cup granulated sugar (divided)
  • 4 teaspoons lemon juice (1/2 lemon)
  • 12 ounces Greek yogurt (full-fat or 2% - recommended not to use non-fat, 1 1/2 cups)
  • 4 ounces heavy cream (1/2 cup)
  • 1 teaspoon vanilla extract
  • Salt, pinch

How to Make

  • Step 1: In a saucepan combine the berries, 1/2 cup sugar and the lemon juice. Mash the berries with a potato masher until they are broken up and juicy and then cook them over medium high heat until thickened (under 10 minutes). Using a rubber spatula press the berries through a fine sieve into a bowl and transfer to a refrigerator to cool completely. Discard all skins and seeds.

  • Step 2: When cool whisk together the remaining sugar (1/2 cup), yogurt, cream, vanilla and salt until the sugar dissolves. Chill until cold (2 hours) in the refrigerator.

  • Step 3: Churn in an ice-cream maker per manufacturers directions. Enjoy as a soft serve or freeze until firm.
