Step by Step Method
Step 1
Cook rice as directed on package, omitting butter. Let cool.
Step 2
Combine peppers, onion, olives and artichoke hearts then fold into the rice.
Step 3
Mix reserved marinade with mayonnaise, pepper to taste, and curry powder.
Step 4
Toss over the rice mixture.
Step 5
Chill overnight covered.
Step 6
Serve in a large dish.
Step 7
Add more mayonnaise next day if needed.
