Ingredients

The ingredients are:
  • 12 ounces chicken flavored Rice a Roni (2 packages)
  • 3/4 cup green bell peppers, minced
  • 8 green onions, minced
  • 1/2 cup stuffed green olives, sliced
  • 12 ounces marinated artichoke hearts, drained, marinade reserved (2 jars)
  • 2/3 cup mayonnaise
  • 1 teaspoon curry powder
  • 1/4 teaspoon pepper

How to Make

  • Step 1: Cook rice as directed on package, omitting butter. Let cool.

  • Step 2: Combine peppers, onion, olives and artichoke hearts then fold into the rice.

  • Step 3: Mix reserved marinade with mayonnaise, pepper to taste, and curry powder.

  • Step 4: Toss over the rice mixture.

  • Step 5: Chill overnight covered.

  • Step 6: Serve in a large dish.

  • Step 7: Add more mayonnaise next day if needed.
