Step 1: Cook rice as directed on package, omitting butter. Let cool.
Step 2: Combine peppers, onion, olives and artichoke hearts then fold into the rice.
Step 3: Mix reserved marinade with mayonnaise, pepper to taste, and curry powder.
Step 4: Toss over the rice mixture.
Step 5: Chill overnight covered.
Step 6: Serve in a large dish.
Step 7: Add more mayonnaise next day if needed.
