A delicious breakfast thank you QueenBea - I used a red capsicum and made 2 eggs for myself and loved the addition of the parmesan. Made for For Your Consideration tag game at FF&F>

Loved this! It was yesterday's company breakfas tand was a big hit. It's very easy to prepare and very pretty. I did find you need to be sure to use the larger of the pepper rings so that the egg doesn't run out.

Bergy (RIP" Forever in our Kitchen)

This is a really neat trick to dress up an egg. It would be lovely on a platter for a brunch buffet with mixed coloured pepper rings. You have to be careful not to over cook - I got mine just in time. I didn't flip them I cooked them with a lid on the pan and a bit of water on the pan. Thanks Beatrice for a lovely brunch 5 Sept 13 Made for lunch - Loved it 24 June 17 This looks so nice on your plate & tastes darn good too. Lovely Sunday Brunch recipe.
