Step 1

Preheat oven to 350 Fahrenheit.

Step 2

Drain chopped mushrooms and reserve liquid.

Step 3

Add enough milk to the mushroom liquid to make 1/2 cup.

Step 4

In a mixing bowl, combine liquid, egg, Worcestershire sauce, seasonings and oatmeal or breadcrumbs; let stand for 5 minutes.

Step 5

Add beef and chopped mushrooms; mix lightly but thoroughly.

Step 6

Shape into a loaf in a 13x9x2-inch baking dish or a loaf pan.

Step 7

Bake at 350 Fahrenheit for 1 hour.

Step 8

Combine catsup and corn syrup; brush on meatloaf; bake an additional 15 minutes.

Step 9

Garnish with mushroom crown topped with pimiento spirals, if desired.

Derf "RIP" Forever in our Kitchen

Very tasty meat loaf, Don loved it and wants it again, we loved the flavour and the mushrooms as a garnish was great. Just had on little problem , it left half of the loaf in the pan, had to scrape and add it on top, i think it would not have happened if i had sprayed the loaf pan so it wouldn't stick. I was able to fix it up with the topping so it looks ok.I just used 1 lb of hamburger and cut the salt way back, didn't need the milk, there was enough juice without it. Also left out the corn syrup and just used chili sauce for the topping. Thanks for a recipe i will use again and again.
